The Best Peach, Tomato, and Burrata Salad

Description

Summer is here and this salad is a must on your menu to enjoy. Fresh juicy peaches, cherries and tomatoes topped with creamy burrata cheese, and a garlicky honey infused vinegarette is a taste of summer in every bite.


Ingredients

Vinegarette

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1/2 shallot, finely chopped
  • 1 clove garlic, pressed
  • 1 teaspoon lemon zest
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/4 teaspoon red pepper flakes
  • kosher salt and black pepper, to taste

Salad

  • 1 1/22 cups cherry tomatoes, halved
  • 3 peaches, sliced into wedges
  • 1 cup fresh cherries, pitted and halved
  • 48 ounces burrata cheese, at room temperature
  • 1/4 cup toasted pumpkin seeds

 

 


Instructions

  1. To make the vinaigrette: combine all ingredients in a bowl and whisk until smooth. Taste and adjust the chili flakes, salt, and pepper. Set it aside.
  2. In a mixing bowl, toss the tomatoes, peaches, and cherries with 1/3 of the dressing. Let sit for 15 minutes at room temperature.
  3. Using a large platter, spread the tomatoes, peaches, and cherries mixture onto the platter. Then, break the balls of burrata around the salad. Drizzle with the remaining vinaigrette and top with pumpkin seeds and additional fresh herbs. Serve with grilled or toasted bread.

  • The salad is best enjoyed the day it’s prepared.
  • The pumpkin seeds can be swapped with your favorite seed or nut.
